As my boyfriend is vegan this valentines day I thought id make him some lovely vegan brownies instead of buying him a gift. Here’s the recipe I used to make these delicious but not too guilty brownies.
65g Cocoa Powder
350g Brown Sugar
1tsp Baking Powder
1tsp Vanilla Extract
250ml Vegetable Oil
150g Dark chocolate chips
Sprinkle of Icing Sugar
Preheat oven to 180 C/ Gas mark 4
Grease and line your brownie tin with oil and grease proof paper.
Sieve flour into bowl then sieve cocoa powder into the same bowl.
Add other dry ingredients (sugar, baking powder, salt) and mix.
Then add vanilla extract and stir it in.
Add wet ingredients into bowl (vegetable oil and water) and mix until smooth.
Add dark chocolate chips and mix until fully incorporated.
Place into tin and leave in the oven for 25-30 minutes.
Remove from oven once fully cooked and leave to cool for 15 minutes.
Once cooled cut into 12 squares and sprinkle with icing sugar.
